Sanitary conditions required for party Halls:

  1. Location: Should be on a main paved road - Area: of proper area enough to allow two halls (i.e. hall for gents and hall for ladies. Lightening; modern system - ventilation: central air ventilation to be fit for the size and number of halls. Theatre: should be properly elevated to allow for good view, provided with projectors to provide indirect illumination for the audience. Acoustic systems: sound should be tolerate by the audience and properly tuned. Flooring: should not be slippery and to be cleaned easily. Hall: enough to contain the entire number of attendants and tables should be covered with clean and proper sheets.
  2. Hall of food preparation: should open directly to the catering room, supplied with stainless steel, tables, washbasin of cold and hot water supply and detergent- ceramic covered flooring two meter high- outlets automatically closed and provided with netting to keep insect out, electric traps for pest control , all tools used should be hygienic and modern.
  3. Bathrooms: should be of two sections one for male and the other for female, not open directly to the party hall, automatic outlets.
  4. Kitchen: if the party hall has its separate kitchen then this should be subject to sanitary conditions, but if the party hall has made an agreement of food supply with one of the public kitchens on bakeries, this should be licensed by health department at municipality, Periodical inspection and periodical testing shall be made for samples of food to be taken from each stage of food preparation.
  5. Workers: All workers should be provided with health certificates showing that they are free from contagious diseases, should wear uniforms, use gloves in the preparation and serving of food, should put on caps.

Sanitary conditions required for companies of water packing and distribution

  1. Location: should be on a main road and far away from any pollution. Area: should be proper for all kinds of operations. Lightening: should be fit and proper, ventilation: should be sufficient to avoid excess heat and dust. Flooring should be of absorption proof materials, in light colours, and the angels between floor and walls should be concave. Walls should be of water proof materials, of light colour. Roofing: should be designed in away that prevents dirt gathering.
    Warehouses: sanitary warehouses should be provided for the storage of products and free from any pollutants.
  2. Water tanks: should be made of a material which is rust proof and not affected by another factors.
  3. Plastic bottles: should be made of a good quality plastic which does not change the taste of water.
  4. Packing method: packing of water should be conducted by machines. A sterilizing apparatus should be provided to sterilize water by ozone gas, a monitor should be available to control water packages and make sure that they are free from any dirtiness, washing should be made in water of 50 C0, and returned packages should be machine washed in ozone processed water, to be gathered in a separate places.
  5. Workers: should be provided with health cards showing that they are free from contagious disease, should wear uniforms, gloves masks and head caps.
  6. Distribution vehicles: should be in a design to prevent dust or the exposure of water packages to sun rays.
  7. Labels: should be fixed on final products, in print, showing the name of material contents, name of producing company, country of origin, production date, expiry date and the company address.
  8. Other conditions: a simple lab should be available, a program for pest control to be based on an agreement with one of pest control companies. There should be also an effective sewerage system supplied with holes for proper internal inspection and checking.

Sanitary conditions required for restaurants:

  1. Area: - The proper area for the kitchen should be not less than 3 x 4 m2, but in case there is an oven it should not be less than 3 x 8 the total area should not be less than 50 m2.
  2. Doors and Front: - Automatic doors should be provided, that is in addition to the fixing of netting to prevent insects and flies from coming in. Also the restaurant should be provided with a glass front.
  3. Bathrooms & Warehouses: - They should be on a separate area and separated from the restaurant by an outlet. Total area of the bathroom should not be less than 2.5 x 1.5 m2 and the restaurant should be connected with the sewerage for drain of dirt. As well as that a filter should be used for the storage of water quantities, and there should also be available a separate warehouse for storing food stuffs.
  4. Lighting & Ventilation:- Natural lighting and ventilation should be supplied as well as electrical lights and A/C systems.
  5. Walls & Flooring: - The floor should be covered with tiles and the painting on walls must be in light colour.
  6. Kitchen: Should be of proper area and separated from dining hall and bathrooms. Also a big ground basin should be provided for washing big dishes in addition to a stainless steel sink of two basins and a supply of cold and hot water. There should be also ventilation fans and a two meter high chimney. Food should be prepared on a marble bench ( 3 x 1 m), and all kitchen tables should be 30 cm above the ground for convenience of floor cleaning.
    Also there should be available a cooler for drinking water. All doors and windows on the kitchen should be supplied with netting to keep out any insects in addition to garbage container of tight cover. Insecticides are not allowed to be sprayed inside kitchen, Instead, electrical traps are preferable. Cooks should use gloves and they should maintain good hygienic conditions.
  7. Workers: All workers should put on a uniform and they should be provided with health certificates and maintain good appearance and proper degree of cleanliness.
  8. Other conditions: Chairs and tables are not allowed to be left outside restaurant. Chicken grill or shawerma grill machine should be kept within the same area of restaurant.

Sanitary conditions required for bakeries

  1. Any bakery should be divided into four areas: Display Area - Oven & Dough Area Packing Area - Warehouse Area
  2. Walls should be covered with ceramic (1.5 m high above the ground) and free of any cracks, painted in light colour, floor covered with tiles, easy to clean.
  3. Glass front and all doors, outlets and windows provided with netting to keep insects out.
  4. Dough room should be supplied with pure water, Diesel used as fuel or electric oven. Ground basins and hot water for washing dishes. Wooden and metal racks for storing bread. Big table of marble or metal for dough formation. Sufficient lighting and ventilation, electrical traps for catching insects but insect killers should not be used, white cloth for covering dough.
  5. Packing and display room : Should be of proper area for display, provided with sufficient lighting and ventilation as well as tables of marble or metal for packing. However, show windows are preferable.
  6. Workers : Should wear uniforms and provided with health cards, clean looking, not allowed to sleep at the bakery.
  7. Other conditions : Workers should be provided with washing basins and toilets and there should be a high chimney over the bakery besides a garbage container.

Sanitary Conditions required for pest control companies

  1. Workers : Should be provided with health cards, using uniforms and also a qualified & specialized person who has experience in such field.
  2. Office: a valid copy of the tenancy contract and the license should be presented. Furniture should not be made of materials which can absorb insecticides. In case of contracting with a certain company. Issuing a contract showing the company’s compliance with instructions and the number of the spraying of insecticides. Attached also thereto a statement showing the date, time and the type of the sprayed insecticide, bearing the stamp and signature of the company. The said statement should be presented to health inspectors upon inspection and the company shall be held liable in case of any violation if any insects are noted inside the establishment.
  3. Warehouses : Should be outside residential areas and they should contain the insecticides permitted by municipality, should be provided with proper systems of ventilation and temperature regulation inside the store. Warehouses should also be maintained in clean conditions. Empty containers of insecticides should be removed to the knowledge of municipality. Full containers should be kept tight covered to prevent any leakage of contents. Insecticides should not be mixed and prepared before the time of use. If the warehouse was near a residential area then it shall not be allowed to keep inside more than (10) liters of each liquid insecticide not more than (10) kgs of any powder insecticide. Combustibles are not allowed to be stored in big quantities inside warehouses. The store doors should be closed automatically and warning signboards (i.e “No admission”, or dangerous stuff” should be placed. Only authorized people are allowed in. Proper records should be made for any in-coming and out-coming quantities.
  4. Other conditions: Pest control tools and equipments and masks should available for workers. Washbasins, First Aid, safety vocational equipments, fire extinguishers and Civil defense approval should be available.

The Hygiene conditions which should be available at foodstuff factories

  1. Building: should be made of bricks and cement, floors should be tiled, walls should be covered with cement (height= CM 180). No holes or cracks in order to prevent insect’s infiltration. Means of ventilation, cooling, adequate lightening and first Aid box should be provided.
  2. Workers: Health cards should be issued and uniforms should be arranged, work tools (i.e. gloves, plastic shoes and head covers should be provided. A specialized technician should be also available.
  3. Other conditions: bathrooms and washbasins for workers should be provided- netlike doors should be installed on all the windows and factory gates. Drinkable water should be provided. Sewerage should be available to drain the fluid wastes and Container for the solid garbage.
  4. Dairy factories: A heating system for milk at 65 degree should be installed and a refrigerator to keep the products (temp=7 to 10 centigrade).

The Hygiene conditions which should be available at Supermarket

  1. Building: Area should not be less than 40 M2 and width not less than 4 meter. The inside walls should be dyed with oil paintings, tiled floors should be provided, shelf to store goods, glassy containers to keep desserts- Air-conditioners to cover the whole area. Glassy doors to be opened and closed automatically, containers for garbage and a store with tiled floors and high wooden shelves should be also provided.
  2. Workers: Health cards should be issued for workers, general outlook and appearance should be considered.
  3. Refrigerators: provide refrigerators to keep drinks and juices and freezers to keep the food.
  4. Not to fill the foodstuff in small containers without Municipality permission. Apply Pest control (insects and rodents). Not to freeze fresh meats and dissolve frozen products. Notify about pork meat (if any).

The Hygiene conditions which should be available at groceries

  1. Shop: Area should not be less than 15 M. Inner walls should be covered with oil painting. Tiled floors should be available and shelves for storing goods. Sufficient Air-conditions to cover the whole area. Glassy doors to be opened and closed automatically, containers for garbage.
  2. Workers: Health cards should be issued for workers, general outlook and appearance should be considered.
  3. Refrigerators: provide refrigerators to keep drinks and juices and freezers to keep the dairies.

The Hygiene conditions which should be available at coiffures and beauty shops

  1. Building: Area should not be less than 20 M2. Adequate lightening and Air-conditions should be available. Isolated rooms for nails trimming and hair removing. Especial room for preparing Henna and hair removing tools. The required tools for cutting, beatifying. Sufficient quantities of towels and lockers to keep stuff. Appropriate furniture preferably made of leather (to be cleaned easily). No carpets or moquettes are allowed. An appliance to purge the tools should be available. First Aid box and container with fixed cover to keep the wastes should be also available and also a source for hot and cool water.
  2. Workers: Health cards should be issued for workers, and uniforms should be provided to them.
  3. Others: No men are admitted and no family or individual should be accommodated.

The Hygiene conditions which should be available at barbers

  1. Building: Area should not be less than 12 M2. Each chair should be 4 M2 and distance between chairs should not be less than 1.5 M. The inner walls should be painted with oil painting. Floors should be tiled. A source for hot and cool water should be provided. Antiseptics and autoclave should be available to sterilize the tools. Container for garbage, lightening and air-conditions should be also provided.
  2. Workers: Health cards should be issued for workers, general outlook and appearance should be considered.

The Hygiene conditions which should be available at poultry shops

  1. Building: Area should not be less than 3*6 M2. The shop consists of two sections, one for the live poultry and the other for butchering and slicing. Ventilation and adequate lightning should be available. A source for hot and cool water should be provided. The surface used for butchering and slicing should be made of ceramic or tiled floor. Container with firmly closed cover should available for garbage. The required equipments for butchering and plucking out feathers should be made of stainless materials.
  2. Workers: Health cards should be issued for workers, general outlook and appearance should be considered.

Hygiene conditions which should be available at butchery shops

  1. Building: Area should not be less than 3*3 M2. . Grounds and walls should be made of tiled floors. A source for hot and cool water should be provided. A refrigerator with a temperature not more than 4 centigrade and a clean wooden bar to cut the meat should be available. The required tools for Slaughtering and slicing should be made of stainless materials. Container with firmly closed cover should available for garbage.
  2. Workers: Health cards should be issued for workers, white uniforms should be provided to workers.
  3. Other conditions: No toilettes are allowed inside the shop.

The Hygiene conditions which should be available in the vehicle that transfer the foodstuff

  1. Acquire the Municipality approval (Public Health section) to transfer foods.
  2. Vehicle: Insulator of 5 cm width should be installed. The ceiling and walls should be made of non-poisonous soft but solid and un-cracked material, washable and antirust. Appropriate shelves and adequate lightening should be provided. A level higher than the vehicle basic level (i.e. 15 cm3) should be provided. The temperature should be adjusted with the foodstuff. It is not allowed to switch off the A/C if there is any foodstuff kept inside the vehicle.
  3. Workers: Health cards should be issued for workers, general outlook and appearance should be considered. Smoking is forbidden inside the vehicle.

The Hygiene conditions which should be available in the public cuisines

  1. Building: should be made of tiled floors and ceramics. Grounds and walls should be made of ceramics (i.e. height =180 cm). A source for hot and cool water and also drinkable water should be provided. Air conditions to cover the whole area should be provided. Netlike should be installed on the windows and doors. Electrical traps for insects should be provided. Sewerage network should be available to discharge the fluid wastes and Container for the solid garbage. Stainless tables should be provided.
  2. Workers: Health cards should be issued for workers, general outlook and appearance should be considered.

The Hygiene conditions which should be available in the private schools

  1. Building: should be located on accessible pavement. The total area and the classes’ area should be appropriate. Lightening, natural and artificial ventilation should be available. Every 15 students should have a bathroom. Separating the bathrooms of kids from other students and separating males’ bathrooms from females’.
  2. Workers: Health cards should be issued for workers, general outlook and appearance should be considered.
  3. Other conditions: make contract with one of the licensed companies that provide foodstuff and mineral water. Make contract with one the public clinics for medical supervision and a resident nurse should be available at school. Make contract with one of the pest control companies.

The Hygiene conditions which should be available in the private clinics

  1. Building: Area should not be less than 70 M (two rooms and a hall + doctor room). The walls are painted with oil painting- tiled floors- lightening and ventilation should cover all the area.
  2. Workers: A doctor, receptionist and two nurses (male and female) licensed from Ministry of health should be available. White uniform should be provided to all workers.
  3. Tools and equipment: furniture should be made of leather (washable). An office for a doctor, seats for customers, a bed with plastic blanket for checkup, special chair to examine teeth, a source for hot and cool water, a container to dispose of used syringes, an apparatus to sterilize tools, lockers to keep files and tools, bags to dispose of the medical wastes and garbage should be provided.

The Hygiene conditions which should be available in the coffee shops

  1. Building: Area should not be less than 50 M located far from residential areas as much as can be. Tiled floors and the walls should be painted with appropriate color. Ceiling should be made of reinforced concrete or false-ceilings.
  2. Workers: Health cards should be issued for workers, general outlook and appearance should be considered.
  3. Tools: refrigerators to keep drinks and juices - a source for hot, cool and drinkable water- ventilation and adequate lightening to cover the whole area, sewerage network. Aluminum shelves to keep dishes, bathroom and washbasins for customers, a place provided with fan to light on coals, tables and chairs for customers, the visitors’ yard should be separated from drinks preparations. Tables and chairs should not be located outside the zone of the shop. Garbage containers, detergents and antiseptics should be provided. Mouthpieces for hubble-bubble should available (i.e. each user should be provided with a mouthpiece).
  4. Other conditions: periodical inspection file should be issued. A contract with pest-control Company (licensed by Municipality) is a must.
